About Us
Local food systems begin and end with the very best parts of the story: small farms and delicious food.
But actual local food systems are complex, with interdependent moving pieces. If one piece is missing or broken, that part of the food system can’t function, bringing an end to the best things about them - like small farms and fresh local food.
One less visible piece of the local food system infrastructure for meat and poultry products is slaughter and processing under USDA inspection, allowing the products to be sold in the most flexible ways.
This work is not only less visible but to many also distasteful - yet it is a requirement for our local food system to include local meat and poultry products. Unfortunately, access to processing is extremely limited in most places around the country.
Swift Run Station is here to address that need in Washtenaw County.
People Behind the Project
Swift Run Station and associated companies are an effort, spearheaded by Wendy Banka, to help ensure that fresh local meat and poultry are again a reliable part of our local food system. Wendy is committed to supporting local farmers and to a sustainable local food system.
